Our Beachfront Two-Bedroom Suite was the definition of refined comfort, nearly 2,000 square feet of sleek limestone, rich wood, and seamless indoor-outdoor flow. Bedrooms opened onto private terraces, the bathrooms featured deep soaking tubs and outdoor showers, and every corner was curated with precision. But the real showstopper? The private plunge pool overlooking the Sea of Cortés, where mornings started with a quiet swim and evenings ended with a whiskey in hand, the waves providing the soundtrack.


At Zadún, dining is an experience. Each restaurant showcases the bold flavors of Baja, blending local ingredients with global influences, all with a view worth savoring. Our first night began at Equis, where the experience was pure Cabo. Bare feet in the sand, a chilled margarita in hand, and the rhythmic crash of waves just steps away. As live music floated through the salty air, we indulged in a sensory feast. The X Caesar Salad, topped with Baja-style grilled shrimp, was an unexpected highlight, while the Sushi Tacos delivered a perfect balance of crunch, spice, and umami. The showstopper? The catch of the day, grilled to perfection and bathed in a luscious Chardonnay cream sauce, served alongside vibrant roasted vegetables. Simple, fresh, and utterly unforgettable.
The next evening, we found ourselves immersed in the heart and soul of Mexican cuisine at El Barrio. The scent of freshly pressed tortillas filled the air, and the warm, rustic atmosphere felt like a long embrace from an old friend. Every dish honored tradition, but the Beef and Lamb Barbacoa was something else entirely. Slow-cooked for hours, the meat practically melted into the handmade tortillas, each bite bursting with deep, smoky richness. Topped with vibrant salsas and paired with a bold Mexican red wine, it was the kind of meal that stops conversation mid-bite.

Then came Humo, the crown jewel of Zadún’s culinary scene. Perched above the coastline with an open-air kitchen overlooking the Sea of Cortés, this fiery spectacle of a restaurant is where South American tradition meets Baja’s bountiful shores.
Helmed by Chef Jeffrey Liu Rodríguez Román, Humo is an ode to ancestral grilling techniques, blending the flavors of Patagonia, the Andes, and the Peruvian coast. A graduate of Lima’s esteemed D’Gallia Gastronomic Institute, Román cut his teeth at some of Peru’s most revered kitchens, including the iconic La Mar Cebichería. His menu at Humo pays homage to the art of fire cooking, using a custom wood-fired grill that sears, smokes, and transforms every ingredient into something extraordinary.
We started with Peruvian ceviche, a bright, citrus-kissed masterpiece, followed by a golden, flaky empanada, its filling an homage to Román’s Argentine influences. But the true spectacle unfolded in the open kitchen, where flames roared and leaped into the night, a mesmerizing prelude to the main course.

The grilled lobster, pulled straight from the surrounding waters, was sweet, succulent, and kissed by smoke, while the filet mignon, seared to perfection, was pure, buttery decadence. Each bite was a testament to precision and passion, heightened by a carefully curated wine from Sótano Cellar, Zadún’s exclusive collection of 1,000 bottles and 350 labels.
No meal is complete without the perfect sip, and Candil Agave Bar takes that to an art form. For tequila and mezcal lovers, this is heaven in a glass, a curated agave journey celebrating Mexico’s most iconic spirit. As a tequila collector, I reveled in the chance to explore rare, small-batch finds, each pour telling a story of tradition, craftsmanship, and terroir. The tasting was both educational and eye-opening, giving me a new appreciation for the depth and complexity of Mexico’s legendary spirit.
Beyond the culinary experiences, Zadún’s new spa, Sensei is a sanctuary of pure relaxation. Spanning 30,000 square feet, this outdoor tropical oasis is an escape within an escape, designed to reset the body and mind through nature, tradition, and modern wellness.
